Edamame Salad

Cook 2 or 3 portions of any dried chinese or japanese noodle (the ones I like takes the same amount of time as the edamame to cook so I throw them into the same pot) Put about 1 cup of peeled edamame in the pot, cook and drain.

Rinse with cold water and drain again. Place in mixing bowl and add:

then toss with a soy and ginger or a miso vinaigrette, or add:

and give the whole thing a good toss with your hands. This will make enough for 2 meals or 3 to 4 sides. I keep some in the fridge to bring to work for lunch or to snack on.
