Bean Salad

1 tin black beans

1 tin chick peas

red, yellow or orange peppers chopped

purple onion, thinly sliced


1/4 c olive or avacado oil

3-4 tbsp green salsa

juice from 1 lime

pinch of salt

pepper to taste


Shake up dressing, then pour on salad to marinate for awhile. Top with shredded monteray jack cheese and guacamole and serve with tortillia chips.


2 large, ripe avocados

1 tbsp chopped fresh cilantro (optional)

2 tbsp fresh lime juice

1 clove garlic, minced

dash hot pepper sauce

pinch ground cumin

salt and pepper to taste

Peel and pit avocados; mash with fork until smooth or chunky as desired.Add remaining ingredients and blend well. Place avocado pit in bowl to prevent discolouration and cover until ready for serving.
