Char Siu (Chinese BBQ Pork)


  • — Char Siu Sauce —
  • 3 tbsp Golden Syrup
  • 3 tbsp Honey
  • 3 tbsp Hoisin sauce
  • 3 tbsp Soy sauce
  • 2 tbsp Chinese rose wine
  • 1/8 tsp White pepper
  • 6 drops Red food coloring (optional)
  • 1 tsp Five-spice powder
  • 1 tsp Sesame oil
  • — Preparation —
  • 3 tbsp Oil
  • 1 kg Pork butt or loin, trimmed and cut into long pieces of 2-inch diameter
  • 6 cloves Garlic, finely chopped
  • 1 inch Fresh ginger, smashed and minced


  1. Heat the Char Siu Sauce ingredients in a saucepan and stir until well combined. Allow to cool.
  2. Place 1/3 of the sauce into a small bowl and add the 3 tbsp of oil. Refrigerate until cooking time.
  3. Place the pork into a bowl or zip-loc bag, add the chopped garlic and ginger and the remaining 2/3 of the sauce.
  4. Marinate overnight in the fridge.
  5. Heat ceramic charcoal BBQ to 400°F.
  6. Shake excess marinade off pork and place it on the grill.
  7. Roast for about 25 minutes, or until done and slightly caramelized, basting with the extra sauce a few times during cooking.
  8. Slice into bite-sized pieces, drizzle remaining basting sauce over top.
