Cheesecake

Ingredients

Crust

  • 1 1/2 cup Graham cracker crumbs
  • 1/4 cup Powdered sugar
  • 1/3 cup Butter, melted

Filling

  • 2 pkg Cream cheese (500 g total), softened
  • 2 Eggs
  • 2/3 cup Sugar
  • 1 tsp Vanilla

Topping

  • 1 cup Whipping cream
  • 1 tbsp Powdered sugar
  • 1 tsp Vanilla
  • 2 cup Fresh berries (blackberries, rapberries, strawberries, or blueberries)

Directions

  1. Mix first three ingredients and press into a pie plate to form a crust.
  2. Mix cream cheese, eggs, 2/3 cup sugar, and 1 tsp vanilla in a bowl.
  3. Fill pie crust with mixture.
  4. Bake at 350°F for 25-30 minutes (27 minutes for us). Do not overcook!
  5. Allow cake to cool completely.
  6. Whip cream, 1 tbsp sugar, and 1 tsp vanilla until stiff peaks form.
  7. Top cake with whipped cream and berries. Any left over berries should be eaten by the handful.
