chocolate birthday cake frosting

This is Greg Case’s recipe for Chocolate Buttercream and it’s fantastic. My kids refer to it as “birthday cake icing” because when one of them has a birthday, this is what they request on their cake. Note The frosting will not taste like coffee, the coffee in the recipe is just there to deepen the chocolate flavour.


  • One pound soft butter
  • 12 ounces dark chocolate (70 to 72 %)
  • 4 ounces HOT coffee
  • 6 egg yolks
  • 3 ounces milk
  • 5 ounces sugar


  1. Step one

Whip butter til light and fluffy, set aside and clean mixer bowl.

  1. Step two

Melt chocolate and hot coffee over bain marie until just melted, stirring to combine. Set aside.

- Step three Place the egg yolk, milk and sugar in a small saucepan. Cook over medium-low direct heat until mixture just thickens and is hot to the touch. Place cooked mixture in mixer bowl and beat in melted chocolate. Beat on medium speed until cooled.

-Step four Add in butter in chunks, and beat until frosting is light and fluffy, scraping down bowl to make sure ingredients are well combined.
