edamame salad


  • 2 to 3 serving of any dried chinese or japanese noodles
  • 1/2 cup frozen peeled edamame
  • 1/2 small cucumber cut into thin rounds then halved
  • 1/2 red bell pepper cut into pieces and then cut on the bias
  • 1 small carrot, peeled and cut on the diagonal, then slivered
  • 1 green onion chopped
  • 1/2 cup sprouts, any kind
  • a few fresh coriander leaves, stemmed
  • a few basil leaves, roughly torn
  • a big handful of salad greens


  1. Step one

Cook noodles and edamame. Drain, rinse under cold water and drain again.

  1. Step two

Place in a mixing bowl with remaining ingredients.

  1. Step three

Add in your favourite soy vinaigrette, or a miso or ginger based salad dressing OR Add soya sauce, sesame oil, juice of half a lime, sea salt and pepper to taste. Give the salad a quick toss with your hands.

Makes 2 meals or 4 sides.
