eintopf with sauerkraut and sausage


  • 6 - 8 medium sized red potatoes
  • 1 L sauerkraut
  • 300 g sausage (kielbasa or any other German or polish deli sausage) sliced into cubes


  1. Drain brine from sauerkraut into pot, add 1 cup water
  2. Add potatoes
  3. Bring liquid to a boil
  4. Boil until soft; add sauerkraut and simmer on medium for about 10 minutes
  5. Mix (with a hand-mixer) until the potatoes and sauerkraut have smoothed together (but there should still be a few bits of potato noticeable)
  6. Add sausage and heat through (about 5 minutes)
